A Little Cooking...
So you are running all day long working, running errands, picking up and dropping off kids, and you know that when you get home to have to do homework with the kids, give baths, brush teeth and you still need to clean the living room... When are you going to cook?
I discovered this low calorie recipe that is so easy and not very time consuming. On top of that, everyone will think you really know your way around the kitchen.
Things you will need:
4 Bell Peppers (I have found that yellow ones are larger for those that need a bigger portion)
1 lb. Ground Beef or Ground Turkey
2 tsp. Cumin (adjusted to taste, I like more)
1 can Enchilada Sauce (I used Old El Paso)
1 can or small bag of Frozen Corn
1 Can of Black Beans (rinsed and Drained)
Mexican Blend Cheese
Directions:
Pre-heat oven to 350. Cut the stem out of your bell peppers, leaving an opening big enough for a small spoon. Rinse and assure that you have removed all the seeds, and place the prepared peppers in a lighlty greased cake pan.
Brown your ground beef or turkey, seasoned to taste. Add cumin, enchilada sauce, corn, and black beans. Mix well. Spoon meat mixture into bell peppers until they are half full. Add a layer of shredded cheese. Finish filling peppers with meat mixture.
Place them in the oven for about 1 hour, or until peppers are as tender as you wanted them. Top with cheese and serve.
I promise this recipe won't dissapoint. Plus, that hour of cook time is plenty of time to accomplish of few things on that crazy long to-do list.
